JUST ARRIVED! NEW 2025!  The first of the First Flush Senchas.  Hashiri means the "first (harvest or catch) of the season made from the very young buds and leaves. Hashiri Shincha Fukamushi is a deeply-steamed sencha made from the Asatsuyu cultivar. with a taste similar to gyokuro. 
Roasted as little as possible to leave the natural grassy flavor.  Shipped in by air because the sooner you drink it, the better it is.  Recommend making small quantities and multiple infusions. 1oz (28g)
Tea Notes: The tea itself is grown using the "kabuse" (shading) method and grown in the Sakaguchi area.

Brewing Instructions:

BEST IF MADE IN SMALL BATCHES WITHIN ONE MONTH

  1. Use 3 grams (1 heaping teaspoon) of tea per 4 ounces of water.
  2. Bring water to 160° F for first infusion. 
  3. Pour over leaves; steep for 90 seconds.
  4. Second infusion, Water 180° F for 30 seconds.

You can also brew with hotter water, at 200°F for 45 sec. This way, the wild grassy flavor comes on strong and you experience the entirety of the terroir in your cup. We recommend you try brewing it both ways
