Hachiju-hachiya Shincha

NEW 2024 Hachiju-hachiya means 88 nights in Japanese. Hachiju-hachiya is a special day in agriculture in Japan. It is 88 nights after the first day of spring on the Japanese Calendar and considered the time all plants begin to sprout. It is normally around May 2. A unique character of this Shincha (which means new tea) is it has been processed as a Chumushi. Chu means medium and shui means steaming, as opposed to Anamushi, the least amount of steaming and Fukamushi, which has the most amount of steaming.  The brew is rich with a refreshing sweetness and astringency and a soft texture.

Ingredients: Japan green tea from Hatsukura, Shizuoka

Brewing Instructions:

BETTER THE SOONER YOU DRINK IT

  1. Use 3 grams (1 heaping teaspoon) of tea per 4 ounces of water.
  2. Bring water to 160° F for first infusion. 
  3. Pour over leaves; steep for 90 seconds.
  4. Second infusion, Water 180° F for 30 seconds.
Or

Use water at 200°F for 45 seconds.

Both ways can be reinfused at least 3 times
