NEW 2023 Hachiju-hachiya means 88 nights in Japanese. Hachiju-hachiya is a special day in agriculture in Japan. It is 88 nights after the first day of spring on the Japanese Calendar and considered the time all plants begin to sprout. It is normally around May 2. A unique character of this Shincha (which means new tea) is it has been processed as a Chumushi. Chu means medium and shui means steaming, as opposed to Anamushi, the least amount of steaming and Fukamushi, which has the most amount of steaming. The brew is rich with a refreshing sweetness and astringency and a soft texture.

- Bring water to 160° F for first infusion.
