It is 88 nights after the first day of spring on the Japanese Calendar and considered the time all plants begin to sprout. It is normally around May 2. A unique character of this Shincha (which means new tea) is it has been processed as a Chumushi. Chu means medium and shui means steaming, as opposed to Anamushi, the least amount of steaming and Fukamushi, which has the most amount of steaming. The brew is rich with a refreshing sweetness and astringency and a soft texture.
